à la minute is an amazing ice cream experience. Chef driven this artisan ice cream shop makes liquid nitrogen to order ice creams from a small list of locally sourced flavors. The chocolate the shop uses? Chef/owner Ryan Berk roasts, grinds, and tempers his own chocolate for this ice cream shop. Recently that chocolate went center stage with Berk's newest gift to Redlands Parliament Chocolate a small shop located downtown. Parliament is obviously Chef driven. All the chocolate is made by hand. The owner himself went to pick out the beans for the bars himself with the coco farmers. All the chocolate is single origin (one type of bean from one spot it gives the chocolate a distinct flavor profile) and unless you get a truffle/candy the only things in your chocolate are cane sugar and coco. Needless to say its not cheap. Candy pieces run around 2 dollars. But if you are a chocolate lover it may be the best chocolate you can find in the Inland Empire.
